Cultured Coconut-Scallion Butter

This is a lovely variation on the slightly sweet coconut butter. It can be used as a topping for your favorite breads, pastas, or for baked potatoes.


3/4 cup coconut butter
1/2 cup idli/dosa water
1 scallion, minced
1 teaspoon salt


  1. In a sprouting jar, mix together the idli/dosa water and coconut butter.
  2. Place the lid on the jar and let it stand overnight in a dark corner of your kitchen.
  3. The following day, put the mixture in a bowl, and drain off any excess liquid.  Add the salt and scallions.
  4. Place in the refrigerator for 15 minutes to set, and then serve.
