This is a lovely variation on the slightly sweet coconut butter. It can be used as a topping for your favorite breads, pastas, or for baked potatoes.
- In a sprouting jar, mix together the idli/dosa water and coconut butter.
- Place the lid on the jar and let it stand overnight in a dark corner of your kitchen.
- The following day, put the mixture in a bowl, and drain off any excess liquid. Add the salt and scallions.
- Place in the refrigerator for 15 minutes to set, and then serve.
