Summer Squash and Heirloom Tomato Carpaccio

Here, the freshest, juiciest heirloom tomato is paired with thinly-sliced summer squash, and covered in a zesty dressing, which all sits on a bed of baby arugula. It’s a great recipe to celebrate the best of the season!

Ingredients

the juice of one lemon
2 tablespoons white balsamic vinegar
4 tablespoons fresh parsley, finely minced
6 basil leaves, finely minced
2 cloves garlic, pressed
1 summer squash, thinly sliced
1 heirloom tomato, thinly sliced
1 1/2 cups baby arugula

Method

  1. Make the dressing by combining the lemon juice, vinegar, garlic, parsley, and basil.
  2. Place the arugula on a plate, and arrange the tomato and squash slices on top.
  3. Drizzle with the dressing.
