1 bunch parsley, finely minced
6 fresh mint leaves, finely minced
1 cup hulled hemp (e.g. hemp hearts)
the juice of two lemons (I recommend Meyer lemons)
2 roma tomatoes, diced
1 scallion, diced
1/2 cup dried cranberries (look for varieties with no added sugar)
1/4 cup slivered almonds
- Mix all ingredients until everything is well-incorporated.
- Marinate for 2-4 hours.
