This is a cold better than pasta dish that is perfect for a hot Summer day. Here, I’ve used a julienne peeler to create the zoodles, or zucchini noodles. You can also use a spiralizer.
1 large zucchini
1 yellow summer squash
1 carrot, peeled
3 tablespoons tahini
1 tablespoon siracha
2 tablespoons soy sauce
1 teaspoon coconut sugar. or other sweetener
3 tablespoons water
1/4 teaspoon black pepper
- Using a julienne peeler, shred the zucchini, squash, and carrot. Mince the scallion.
- Place in a bowl, and add the tahini, siracha, soy sauce, water, black pepper and sugar and mix well.
- To plate, place in the center of a platter and drizzle with any dressing that remains in the bowl.
