Ube, the vibrant purple yam generally found next to the orange, red and white varieties in the supermarket, is one of the great culinary finds of this year. Well, for me anyway, as it has been used in South Asian desserts for a very long time. When roasted, it has a sweet vanilla flavor that pairs perfectly with cocoa and coconut. Here, you get both, and hemp seeds, in a no bake, gluten-free, sugar free dessert that takes only minutes to prepare, assuming you have some cooked ube on hand. For these bites, I am using liquid Stevia extract, but you can also use any other sweetener, or coconut sugar.
1 large roasted ube (purple yam), or approximately 1 1/2 cups
1/4 cup high quality cocoa powder
1/4 cup shelled hemp seeds
4-5 drops liquid stevia
1/4 cup shredded dried coconut
- Break up the ube into small pieces. Using a mixer, puree until smooth.
- Add the hemp, cocoa, and sweetener.
- Roll into tablespoon-sized balls and roll in coconut.
