Citrus Salad with Almond Ricotta

This salad features lovely little California mandarins and, sadly, the very last orange from our orange tree. It’s the perfect salad for what you want something a little sweet.


1/2 cup almond ricotta
1 1/2 baby greens (I am using spring mix)
1 carrot, peeled and sliced
1 small cucumber, peeled and sliced
1/4 sliced red onion
1/4 cup golden raisins, soaked overnight
juice of 1-2 oranges
1 tablespoon coconut butter or tahini
1 teaspoon rice vinegar


  1. Make the dressing by blending together the coconut butter, orange juice, raisins and rice vinegar on high speed for 2 or 3 cycles until the dressing is smooth.
  2. To plate, arrange the greens, carrot, onion, and cucumber and ricotta, and drizzle with the dressing.
