Jamaican Curry Powder

This wonderful, aromatic curry powder will kick all your Caribbean-inspired dishes up a notch. It’s combination of ginger, cloves, anise, and cayenne along with other warming spices will add depth and complexity to all you Jamaican-inspired dishes.


teaspoons coriander seeds
2 teaspoons turmeric
2 teaspoons cumin
2 teaspoons fennel seeds
1 teaspoon cayenne pepper
1 teaspoon brown mustard seeds
1 teaspoon whole black peppercorns
1 teaspoon fenugreek leaves
2 cinnamon sticks
1 teaspoon ground ginger
1 teaspoon allspice, ground
4 whole cardamon seeds
2 whole cloves
2 bay leaves


  1. In a dry, hot skillet, toast all the ingredients except for the fenugreek leaves, for 3-4 minutes, tossing the pan to move the spices about.
  2. Place the spices along with the fenugreek leaves into a blender, and pulse until they become powdery.

  3. Store the curry powder in an airtight container for up to six weeks.
