These brownies are rich, chocolaty and gluten-free! Though I decided not to use them in this recipe, you can also add vegan chocolate or peanut butter chips.
Ingredients
1 can of no salt black beans, thoroughly rinsed and drained
1/3 cup peanut butter (with no added oil, sugar, or preservatives)
1/3 cup nut milk
1/3 cup cocoa powder
1/3 cup cooked brown rice (I used Basmati)
1/3 cup vegan sugar
pinch of sea salt
Method
- Preheat your oven to 350 degrees.
- Using a high-speed blender, blend all ingredients together until a thick, pasty batter is formed.
- Spread batter into a small baking dish that you have oiled using the oil sprayer. Using a rubber spatula, pat down the mixture until it is flat.
- Bake for 25 minutes, or until solid, yet chewy. The outside of brownies should be a darker shade of brown. Slice into squares and serve.
