The star of this recipe is nutrient-rich wakame. Paired with a light sesame dressing, it is the perfect addition to this fresh, crisp, light salad. Serve it with some veggie sushi rolls, or tofu teriyaki for a filling, yet energizing lunch.
1 cup dried wakame
1/4 sliced red onion
3 ounces baby greens
1 tomato, halved and sliced
1 cucumber, peeled and sliced
¼ cup rice vinegar
1 tablespoon toasted sesame oil
1 teaspoon minced ginger root
1 tablespoon soy sauce
1 teaspoon agave
1 tablespoon toasted white sesame seeds
- Wash the wakame and soak for twenty minutes. If necessary, remove any hard stems.
- Make the dressing by combining the vinegar, sesame oil, ginger, soy sauce, agave and sesame seeds, and set aside.
- Assemble the salad: line the bottom of a large bowl with the lettuce. Add the tomato, cucumber, and onion. Top with the drained wakame.
- Pour the dressing over the salad, and then lightly toss.
