Green Salad with Wakame

The star of this recipe is nutrient-rich wakame. Paired with a light sesame dressing, it is the perfect addition to this fresh, crisp, light salad. Serve it with some veggie sushi rolls, or tofu teriyaki for a filling, yet energizing lunch.


1 cup dried wakame
1/4 sliced red onion
3 ounces baby greens
1 tomato, halved and sliced
1 cucumber, peeled and sliced
¼ cup rice vinegar
1 tablespoon toasted sesame oil
1 teaspoon minced ginger root
1 tablespoon soy sauce
1 teaspoon agave
1 tablespoon toasted white sesame seeds


  1. Wash the wakame and soak for twenty minutes. If necessary, remove any hard stems.
  2. Make the dressing by combining the vinegar, sesame oil, ginger, soy sauce, agave  and sesame seeds, and set aside.
  3. Assemble the salad: line the bottom of a large bowl with the lettuce. Add the tomato, cucumber, and onion. Top with the drained wakame.
  4. Pour the dressing over the salad, and then lightly toss.
