Vanilla Bean Avocado Batido

This is a take on the delicious milkshake served at Cuban restaurants—minus the added sugar and dairy milk. Feel free to add additional fruits such as mango, papaya, or fresh berries to make this drink your own.

Ingredients

1 ripe Haas avocado
1 vanilla bean, scraped
1 banana, frozen
1 tablespoon desiccated coconut (without preservatives)
¼ cup coconut milk
2-3 drops liquid Stevia
2-3 ice cubes
dash of nutmeg (optional)

Method

  1. Place the avocado, vanilla bean, banana, half and half, coconut, and stevia into the blender and puree on the Smoothie setting.
  2. Add the ice cubes and blend until smooth.
  3. Pour into tall glasses, and sprinkle with nutmeg.
